  • Use freshly grated coconut if possible — it gives a softer, more fragrant barfi than desiccated coconut.

  • Stir continuously on low heat — the mixture burns very quickly, so never leave it unattended.

  • Grease your tray or pan with ghee before pouring the mixture — this prevents sticking and makes cutting much easier.

  • Let the barfi cool completely before cutting — cutting while warm will cause it to crumble.

  • Cardamom is the key flavour — freshly ground cardamom from whole pods gives a much more intense, aromatic flavour than pre-ground.

Step-by-Step Coconut Barfi Recipe


  1. Heat the ghee in a non-stick pan over low-medium heat.

  2. Add the desiccated or freshly grated coconut and roast gently for 2-3 minutes, stirring constantly, until very lightly fragrant. Do not let it brown.

  3. Add the condensed milk and stir immediately to combine everything well.

  4. Continue stirring continuously on low heat for 8-10 minutes until the mixture thickens and starts to leave the sides of the pan.

  5. Add the cardamom powder, rose water (if using), and a pinch of salt. Mix well.

  6. Pour the mixture onto a greased tray or flat pan and spread evenly with a spatula to about 1.5cm thickness.

  7. Garnish immediately with chopped pistachios or rose petals, pressing them gently into the surface.

  8. Allow to cool at room temperature for 30 minutes, then refrigerate for 1 hour until firm.

  9. Cut into squares or diamond shapes and serve.

💡 Pro Tip for the Perfect Coconut Barfi:


The most important thing is patience and low heat — rushing the process on high heat will cause the mixture to stick and burn before the flavours have time to develop. As soon as the mixture starts pulling away cleanly from the sides and bottom of the pan, it is ready to pour into the tray. At this exact moment, act quickly — the mixture sets fast! Have your greased tray ready before you start cooking so you can pour it immediately.



1. Can I use freshly grated coconut instead of desiccated?

Yes, and it is actually preferred! Fresh coconut gives a softer, more moist, and more fragrant barfi. If using fresh coconut, the cooking time may be slightly longer as there is more moisture to evaporate. The result is worth it.


2. How long does Coconut Barfi keep?

Stored in an airtight container in the refrigerator, Coconut Barfi keeps well for up to 5-7 days. It can also be frozen for up to 1 month — place wax paper between the pieces to prevent them sticking together.


3. Can I make Coconut Barfi without condensed milk?

Yes! Traditional recipes use sugar and milk instead. Simply substitute with 150g sugar and 100ml whole milk, cooking until the mixture reaches the same thick consistency. The condensed milk version is quicker and more foolproof for beginners.


4. Why did my Barfi not set properly?

This usually means the mixture was not cooked long enough. It needs to cook until it completely pulls away from the sides of the pan and holds its shape when a small amount is pressed between your fingers. If it did not set, return it to the pan and cook for a few more minutes.


5. Can I add colour or flavours to the Barfi?
