The hot oil instantly activates the chickpea flour, making them light and airy. And for the ultimate food-blog experience: Let the fried pakoras drain on a paper towel for 2–3 minutes and add them to the hot yogurt curry just before serving. This keeps them beautifully crunchy in the bowl instead of getting soggy!

Add the chickpea flour (Besan) to the onion mixture in stages. Initially, use your hands to coat the onions evenly, using only their natural moisture.
Incorporate the key spices: red chili powder, turmeric, cumin powder, and the special chopped masala mix. Mix thoroughly with the onions.

Gradually add a splash of water, just enough to form a thick, sticky batter that binds the onion strands together. The mixture should not be runny; it must hold its shape. A thick batter ensures the fluffy interior.

Heat the Oil: Heat oil (mustard oil is traditional and flavorful) in a heavy-bottomed kadai or deep pot until it is hot but not smoking. Test the temperature: drop a small bit of batter; it should sizzle immediately and rise to the top.

Form and Drop (as seen in the image above): Wet your fingers. Take a lime-sized portion of the batter, forming a loose cluster that allows the sliced onions to fan out. Carefully drop the batter into the hot oil from close range. The looser the cluster, the crispier the pakoda. Do not overcrowd the pan.

Apply the Pro Tip: Before dropping the batter, apply this crucial trick: Add one tablespoon of the smoking-hot frying oil directly into your raw pakora batter in the bowl. Mix quickly. The hot oil immediately activates the chickpea flour, making the pakodas light, airy, and fluffy on the inside.

Fry and Turn: Fry the pakodas on medium heat. Use a slotted spoon (like the one shown in image_6.png) to gently move and flip them, ensuring even cooking and coloring. Fry until they are golden-brown and crisp.

Drain and Drain Again: Once golden, lift them with the slotted spoon, allowing excess oil to drain back into the kadai. Place them on a wire rack or multiple layers of paper towels to drain again. Let them rest for 2-3 minutes.

Add the Pakodas to the hot Kadhi curry only right before serving. This prevents them from absorbing too much liquid and getting soggy in the bowl.

1 cup gram flour (besan)

8 to 10 fenugreek seeds

⅓ cup chopped onions

1 tablespoon chopped ginger

¾ to 1 tablespoon chopped garlic

2 green chillies

1 tomatoe

1/2 cup curd

1-2 tabelspoon gram flour(besan/chickpea flour)
