Trick 1: Use the Right Flour for Softness

The type of flour you use makes a big difference in how your naan turns out. Traditional naan is made with all-purpose flour, but for an even softer texture, you can mix in some bread flour or use a high-quality all-purpose flour.

You can also try Dinkelmehl (spelt flour) as a partial substitute if you want a slightly nuttier flavour and a tender crumb. Keep the majority as all-purpose flour to maintain the right elasticity.

When baking naan, I often use a blend of 70% all-purpose flour and 30% bread flour. This combination gives the dough enough strength to stretch thin without tearing, while keeping the bread soft and chewy.

Trick 2: Let the Dough Rest and Rise Properly

Patience is key when making naan. After mixing your dough, let it rest for at least 1 to 2 hours in a warm place. This resting time allows the yeast to activate fully, making the dough airy and light.

Cover the dough with a damp cloth or plastic wrap to keep it from drying out. If you have more time, letting the dough rise overnight in the fridge can develop even better flavour and texture.

A well-risen dough will puff up beautifully when cooked, creating those classic bubbles and soft pockets inside the naan.

Trick 3: Cook Naan on a Hot Surface for Perfect Charring

One of the secrets to authentic naan is the way it cooks. Traditionally, naan is baked in a tandoor oven, which gets extremely hot and gives the bread its signature charred spots.

At home, you can mimic this by using a heavy cast-iron skillet or a non-stick pan heated over high heat. Make sure the pan is very hot before placing the rolled-out dough on it.

Cook each side for about 1 to 2 minutes until you see bubbles and brown spots. For an extra touch, you can finish the naan under a broiler or grill for 30 seconds to get a bit more char.

Trick 4: Add Yogurt for Tenderness and Flavour

Yogurt is a classic ingredient in naan dough. It adds moisture, tenderness, and a subtle tang that enhances the bread's flavour.

Always use full-fat plain yogurt in your dough. It helps keep the naan soft even after cooling. The yogurt also helps the naan brown nicely when cooked.

Trick 5: Brush with Butter or Ghee for Richness

Right after cooking, brush your naan with melted butter or ghee. This step adds a rich flavour and keeps the bread moist.

Ghee — clarified butter used in Indian cooking — has a nutty aroma that pairs beautifully with naan. If you do not have ghee, regular unsalted butter works just as well.

For a special touch, sprinkle some chopped fresh garlic or coriander on top after brushing with butter. This gives the naan an extra burst of flavour that is hard to resist.
